BBQ Meatloaf

BBQ Meatloaf Recipe

Ingredients:

•1 pnd Beef
•1/3 cup Sweet Onion; diced
•2 stalks Celery; finely diced
•1/4 cup Worcestershire Sauce
•1 Tbsp Soy Sauce
•1/2 cup BBQ Sauce; Regular or your preferred brand
•2 Tbsp Oregano
•1 Tbsp Basil
•1/2 Tbsp Ceyenne
•2 Tbsp Garlic; minced
•1 Tbsp pepper
•1/3 cup Italian Seasoned Bread Crumbs

Directions:

Preheat oven to 425°F.
In large mixing bowl, combine one pound of beef, onion, celery, soy and Worcestershire sauce; mix with hand two times. (Keep one hand dry, the other your mixing hand.) Proceed with the seasonings and BBQ sauce; mix with wet hand several times and then add in seasoned bread crumbs. Continue mixing for five more turns and well incorporated. Form into oval.

Add meat. Mixture into loaf pan and press down firmly all around. Bake in oven on middle rack, for about 45 minutes. Take out of oven and cut into the center, if juices run clear, proceed to cut through middle and put back into oven for 8 more minutes.

Take out and sit for 3-5 minutes. Serve immediately afterwards. Enjoy!

Squash Stuffing

Ingredients:
______________

•1 Sweet Yellow Onion; chopped
•2 cloves Garlic; minced
•4 stalks Celery; chopped
•1/3 cup Yellow Sqush; chopped
•3 Tbsp Olive Oil
•1/4 tsp ground Nutmeg
•1/4 tsp ground Sage
•1 Tbsp Oregano
•1 pinch Rosemary
•1 Egg
•1 shake Worcestershire Sauce
•1 shake Soy Sauce
•1/2 box Chicken Stock
•1 Loaf Day old Italian Bread; cubed

Directions:

Preheat oven to 375°F. In a large skillet, sautee chopped Onions, Garlic, Celery and Squash with Olive Oil. Sweat down until glossy, add spices, stir. Remove from heat.

In a large bowl, add cubed up day old Italian Bread and everything from skillet. Pour in the 1/2 box of Chicken stock over top and stir. In seperate bowl, crack one egg and wisk in Worcestershire and Soy sauce. Then pour over stuffing mixture; stir until coated.

Spread the mixture onto baking sheet and bake for 12 minutes; stir. Bake  for additional 13-20 minutes or until golden brown. Remove and serve immediately with a sprinkle of Kosher Salt atop.

Enjoy!

Left overs should be eaten within 4-5 days.

Sloppy Momma Joes


Ingredients:
______________

1 lb Ground Beef
1 Red Bell Pepper
1/2 pack Baby Bella Mushrooms; diced
5 sprigs Thyme
3 sprigs Cilantro; roughly chopped
1/3 cup Worcestershire sauce
1/2 cup Ketchup
2 Tbsp Spicy Brown Mustard
1 shake of Soy Sauce
2 Tbsp Grape Jam
1/2 Tbsp Paprika
1/3 tsp Nutmeg
1 Tbsp ground Cheyenne Pepper
1/2 Tbsp Black Pepper

Directions:

On Medium-High heat, brown Ground Beef in large skillet; drain. Return back to the heat, but turn it down to Medium heat level. Add the diced red pepper, diced Bella mushrooms, Thyme, and Cilantro. Stir once and let the veggies and herbs get acquainted with one another. Now, after a few minutes add in the third cup of Worcestershire sauce, and a shake of Soy sauce; stir.

In a seperate bowl combine the 1/2 cup of Ketchup and 2 Tbsp of Grape jam; mix well. Add the mixture into the skillet. Then at the Spicy Brown Mustard; stir about 3x to get everything coated. Lastly add in the spices and stir them in completely.

Turn the heat on Low and let simmer for 5-8 minutes. Remove from heat and let stand for the remaining 2 minutes.

Serve on warm Kaiser rolls and Sweet Potato fries on the side. Enjoy!

Have left overs? Great! Store in a container and put in the fridge, it will last up to 5 days.
